I try to use organic and locally grown ingredients whenever possible.  My concerns are for health reasons, protection of the natural environment, and the support of local economies.  Some students take Dance Studies classes just for the cookies!

HEALTHY CHOCOLATE CHIP COOKIES (can be a meal in themselves)

Cream together:

                        One Stick organic Butter (one half cup)

                        One Cup Sucanat

Add:

                        One teaspoon Vanilla

                        One free-range chicken Egg

Mix and Stir in:

                        Two Cups Spelt wheat Flour (can substitute a little rye or ww flour)

                        One teaspoon Baking Soda

                        One half/teaspoon Salt

Stir in:

                        One Cup Chocolate Chips

                        One half/Cup chopped Nuts (optional, I like walnuts)

                        One half/Cup Oatmeal (optional, especially good in winter)

Spoon on to greased baking sheet and bake 350 for 10 minutes.  Makes approximately three dozen cookies.  For a special treat, can add one/eighth cup cocoa powder with flour for chocolate, chocolate chip cookies.

           

FINALLY PERFECTED PEANUT BUTTER COOKIES

Cream together:

                        One Stick organic Butter

                        One Cup organic Peanut Butter

                        One half Cup local Honey

                        One free-range chicken Egg

                        One Teaspoon Vanilla

Mix together and Add:

                        Two and one/fourth Cup Spelt Flour

                        One/half Teaspoon Salt

                        One/half Teaspoon Baking Soda

                        One/half Teaspoon Baking Powder

Form dough into balls and bake at 350 for 10 minutes.  Makes approximately four dozen cookies.
